Wakaha Sake Brewery

Founded in 1922.
Our storehouse is located in Okawa City, Fukuoka Prefecture, which has prospered as one of Japan's leading producers of furniture and fittings.
The Chikugo River, the largest river in Kyushu, flows next to the storehouse, and like the river, it was named ``Wakawa'' with the desire to ``raise young waves.''

The concept of Wakaha Sake Brewery's alcoholic beverages is ``a push wave of flavor and an ebb wave of lingering taste.''
The overwhelming flavor and the lingering finish will make you feel as if you are floating on gentle waves.

Shirasugi Sake Brewery

Founded in 1777.
We have a brewery in Kyotango City, which is famous for "Tango Chirimen."
Currently, Satoru Shirasugi, the 11th generation brewer, is the chief brewer, and the brewery's ladies, sales staff, and a small group of brewers work together to produce sake with all their might.

The sake brewery has a rich history dating back 300 years, but contrary to this, the sake brewing is unique in that it is extremely innovative.
In 2013, when the 11th generation took over as chief brewer, what kind of sake brewing can you do yourself? What I came up with was,"Creating delicious sake using local edible rice"It was a completely new attempt.
Although it was a novel idea, the taste of sake made from the rice that we consume every day was very familiar to the tastes of drinkers, and it quickly became popular.
now in japanWithout using rice suitable for sake brewing,A unique sake brewery that makes sake using edible ricehas been established.

The representative brand is “Hisashi Shiraki」。
The name Shirakihisa comes from the fact that ``Shirasugi'' was written as ``White cedar.''
This "shirakiku BLACK LABEL revolution" uses Koshihikari rice grown in Tango and black koji malt.
Generally, the koji used to make sake is yellow koji, but using black koji produces a lot of citric acid. This citric acid makes it possible to produce yeast that is healthier and purer than ordinary yellow koji.
Therefore, it is characterized by its fresh and juicy taste.
In addition, you can see the innovative side in many aspects, such as not only selecting koji but also bottling it into wine bottles.

In addition to this, there are various unique types of Shirakihisa, and while weaving traditions such as playful names and label designs, we continue to challenge and evolve with the times.

Nue is a creature that appears in stories such as The Tale of the Heike.A fusion of four different creatures: the face of a monkey, the body of a raccoon dog, the limbs of a tiger, and the tail of a snake.It's a legendary monster.
There are four types of koji, ``yellow koji,'' ``white koji,'' ``black koji,'' and ``mirin koji.''
We use four types of yeast: "Kyo no Hana", "Kyo no Koi", "Kyo no Saki", and "Kyo no Koh".
Although it may seem complicated at first glance, the taste is very simple.
It has an elegant scent similar to Western liquor, with a gentle sweetness and refreshing acidity. A fresh and juicy drink.

Mori Sake Brewery

Founded in 1895.
Our warehouse is located in Hirado City, Nagasaki Prefecture, which was once known as "Philando" during the Age of Discovery and was the first port town in Japan to engage in Western trade.
At the beginning of our business, we operated under the trade name "Komatsuya",With the changing times, in the 1950s, the company was incorporated as Mori Sake Brewery Ltd. Currently, the fourth generation, Yukio Mori, is the head of the company.

Mori Sake Brewery is famous for its representative brand ``Hiran'', but it was actually on the verge of going out of business until a few years ago.
What saved the storehouse from such a critical situation wasThis is Yutaro Mori, a young fifth-generation chief brewer.

Yutaro, who majored in brewing science during his university days, started working on restoring the aging brewery when he returned to the brewery.We have returned to the origins of sake brewing.
It is an ancient Japanese sake brewing method.“Kimoto-zukuri”introduced,Paddling, adding water, filteringwithout doing anything like that to improve the taste.Natural sake brewing that relies on the action of yeastI decided to do this.

The water we use is the famous water that gushes out from the foot of Saikyoji Temple, which we have been using since our establishment.
The rice used is Yamada Nishiki from Hirado and Nikomaru edible rice from Nagasaki.
We believe that by not dressing up too much and using local materials, we will be able to circulate to the people who have supported the sake brewery over the years, and continue to spread the word about Hirado's climate and charm.

The sake that was born from this idea is ``Hiran”. 
Regarding the origin of Hiran, the place name of Hirado used to be that the shadow of Hirado island seen from the sea was a divine spirit that turned into a bird.It was named ``Hiran Island'' because it resembles the image of a ``Ran'' taking flight.

 There are various types of Hiran, from fruity and light to light and crisp.Starting with winning an award at the National Liquor Awards, it has become so popular that it has been praised not only in Japan but also overseas, including winning the gold medal at the 2021 Clamaster in Paris.
This can also be said to be the result of Yutaro's "curiosity" and "exploratory spirit" in making sake.
