About "LIBROM Craft Sake Brewery"

Based on the concept of "bringing Japanese sake culture closer to you," we want to create sake that is familiar and loved by the younger generation.
With this in mind, LIBROM is brewing sake in Takasago, near Tenjin, Fukuoka Prefecture.
Traditionally, sake was brewed using spring water or well water that flows from the rich natural soil.
However, in modern times where various technologies have developed, it is now possible to make delicious sake even in the city! With this belief in mind, we are taking on the challenge of creating new craft salmon by incorporating the experience we gained from training at a sake brewery and new methods unique to breweries in the city.
There is a PUB attached to the brewery, where you can enjoy fresh sake and snacks while watching the sake brewing process right in front of your eyes.
We hope to become familiar to people who have no interest in sake by seeing the unfamiliar aspects of sake brewing and talking with the sake brewers.
What is craft salmon?

"Craft Sake" is a new genre of alcohol that is based on Japanese sake manufacturing technology, or that aims to create new flavors by adding auxiliary ingredients to it.。
Currently, we are not issuing new sake manufacturing licenses.
Therefore, we create alcoholic beverages in the category of ``other brewed alcoholic beverages'' by adding edible flowers and fruits as adjunct ingredients to the alcoholic brewing process.
While preserving the traditional techniques of making sake, we are constantly exploring new possibilities for sake through trial production and improvement, such as seasonal sake, fruit alcoholic beverages, and sparkling sake made from seasonal ingredients.
Origin of LIBROM

"LIBROM" is a coined word that combines two Italian words: LIBERTA (freedom) and ROMANZO (roman).
It was born from the favorite words of Yagyu, the representative, and Anami, the brewer.

Water is important for sake brewing, and LIBROM uses tap water from Fukuoka City as the brewing water after passing it through a filter. In modern times, where water purification technology has developed, tap water is more than enough clean and safe.。
Auxiliary raw materials
LIBROM's alcoholic beverages are manufactured by adding edible flowers and fruits as auxiliary ingredients during the brewing process and fermenting them together. We change the manufacturing method according to the auxiliary ingredients used, and aim to create sake with a beautiful balance without overpowering the individuality of the auxiliary ingredients.
Koji
Koji making is the most important process in sake brewing. The koji room is extremely small with a maximum draw capacity of 10kg. We change the temperature control according to the type of alcohol and use not only yellow koji but also white koji. Taking advantage of the unique advantages of a compact koji room, we carefully make koji one by one.

Since this is an online event to be held in the summer, we will be delivering summery drinks, including newly released ones, in a limited 180ml size.
●Mango (new product) 180ml
Craft salmon made with plenty of ripe mangoes from Fukuoka Prefecture.
Ripe mangoes grown with light, water, and soil through reduced pesticide cultivation have a melting sweetness with a sugar content of over 17 degrees.
A luxurious dish with a refreshing taste that combines with the sweetness derived from rice to create a rich flavor.
●Passion fruit (new product) 180ml
Craft salmon made with rare passion fruit from Fukuoka Prefecture.
This tropical fruit, called "lilikoi" in Hawaiian, is specially grown without pesticides while soothing music plays.
The refreshing acidity and subtle sweetness bring out the flavor of the rice, making you feel like you're in the tropics.
●Mint 180ml
A refreshing craft salmon made with mint from Fukuoka Prefecture.
Inspired by the cocktail Mojito (mint and lime mixed with rum and carbonated water), which originated in Cuba, we created a flavor that retains the sweetness of the rice while making the most of its sourness.
