Mori Sake Brewery has a history of over 120 years in Hirado.

Please tell me about the storehouse.
This is a sake brewery located in a castle town located in the northern part of Hirado City, Nagasaki Prefecture (located in northern Nagasaki).
Hirado is a port town that flourished as a trading base before Dejima, Nagasaki, and is a place rich in nature surrounded by the sea and mountains.
The company was founded as a sake brewery business since the Edo period, but in 1888, several sake breweries (presumably joint ventures) went out of business, and our company became independent and reopened as Mori Sake Brewery. Therefore, this year marks the 126th anniversary of Mori Sake Brewery.
Please tell us about the characteristics of the area.
I think this is because we have a water source that has never run dry since our founding, and we have an abundance of clean, soft water suitable for sake brewing, as well as fresh meat and fish that bring out the deliciousness of our sake.
How did Mori Toji get involved in sake brewing?
Although he is the eldest son of a sake brewery, the reason why he focused on working in the field rather than as a manager was because the brewery had not had a brewer in charge of sake brewing for many years, and there were difficult circumstances in which they were not able to make the sake they had hoped for.
Please tell me the best sake you've ever made.
Honestly, I still don't think this is the best drink. However, when people get to know Hiran at alcohol parties and see people genuinely happy, saying things like ``It's delicious!'', I feel happy because I think I've created the best sake for that person. I believe that each and every sake that we have made so far has been the best in its own right.
Please tell us about your thoughts on sake brewing.
We want the people involved through Hiran's sake brewing to be happy. They produced sake that the people who drank it enjoyed, and as the production of Hiran increased, the demand for rice increased, reducing the amount of abandoned farmland in Hirado, and revitalizing Hirado's agriculture. I would like to create this kind of virtuous cycle.
future vision
This season, I tried Kimoto for the first time. The reason for this was that we wanted to make sake that was more natural without additives. In the future, we will shift our rice cultivation to pesticide-free rice and create sake full of vitality that fully utilizes the power of nature.
