The speaker will be from Hiyoshi Sake Brewery, which has a brewery in Wajima City, Ishikawa Prefecture.
The brewery was almost completely destroyed by the 2020 Noto Peninsula Earthquake that occurred on New Year's Day one year ago.
Even now, the situation is such that recovery is so slow that joint brewing has been forced.

Founded in 1912.
The brewery is located on Asaichi Street in Wajima City, Ishikawa Prefecture, which is known as one of Japan's three major morning markets.

Originally it was a retail business, but the founderIn a dream, a white horse with a golden gourd on it told him to start making sake.This led me to become a sake brewer.

Treasure water gushes out from the basement of the storehouse, and never runs out.“Wajima sake brewed with water from the well closest to the Sea of Japan”Representative brands as“Kinpyo Shirakoma” “Ore no Sake” “Sasa no Tsuyu”etc.

Currently, the fifth generation chief brewer is"Satoshi Hiyoshi"President.
Hiyoshi Sake Brewery's sake, which is brewed by the master brewers of Noto, has a sharp, spicy aroma and a slight sweetness on the aftertaste, making it a drink you won't get tired of drinking.

It operated as a liquor store with roots in Oku-Noto Wajima, offering retail sales and brewery tours, but was damaged by the Noto Peninsula Earthquake in 2020.
Since the brewery has ceased to function, we are currently working on joint brewing within and outside the prefecture, and are preparing for recovery with the aim of producing sake again in Wajima.

The story of Hakuba that led Hiyoshi Sake Brewery to start brewing sake.

In fact, from the time of its founding until before the war, white horses were bred on the premises of the brewery, and during the spring festival every year, white horses were raised next to the brewery.Passing through “Umadashikoji”It is said that horses were offered to the guardian deities.

Due to this connection with Shinto rituals, the representative brand ``Kinhyo Shirakoma'' was born, with the carefully bred white horses and ``Gourd to Koma'' carrying good luck.

At Hiyoshi Sake Brewery, we use water from the well closest to the Sea of Japan (as of January 2025, unusable due to disaster damage), and we also use Ishikawa Prefecture's original sake rice.“Hyakumangoku no Shiro”YaKanazawa yeastWe produce sake locally for local consumption, using ingredients from Ishikawa Prefecture.

“Hyakumangoku no Shiro” was created due to the slump in demand for sake in recent years.The prefecture's original sake rice debuted in 2020 after 11 years in response to the demand for high-value-added sake brewing using local sake rice.

The Reiwa 6 Noto Peninsula Earthquake occurred on January 1, 2024.
It wasn't a horizontal or vertical tremor that I had ever felt before, but a big tremor that felt like I was being thrown around.
President Hiyoshi, who was just outside the warehouse, witnessed the collapse of the warehouse.
After that, a huge fire broke out on Asaichi Street, destroying 80% of the sake brewery.The fire stopped right in front of the Hiyoshi Sake Brewery, and although we managed to avoid secondary damage, the sake brewery was completely destroyed except for the store.

The enamel inside the iron brewing tanks and the tanks used to store sake have cracks, making them unusable.
The well is filled with sand and mud, and the water level is so low that it is difficult to draw water.
With no hope of restoring lifelines, we had no choice but to abandon sake brewing in Wajima.

Currently, we are jointly brewing alcoholic beverages within and outside the prefecture, and the store is only open on weekdays as the store has been powered up.

The high added value and specifications of Wajima's local sake were the aspects that President Hiyoshi was most concerned about during this online sake brewery study abroad trip.

Are you concerned about specifications such as high whitening and low whitening?
I'm concerned about the specs, but in the end, the best thing is that it tastes good.
What I look for in local sake is that it is easier to buy if it emphasizes the uniqueness of local sake production, such as using sake rice like Hyakumangoku Nohaku.
What is your impression of local sake in Ishikawa Prefecture?
It's a delicious sake that goes well with fish dishes.
I would like them to stick to the classic Ishikawa style of sake without following trends.
In the future, should we increase the number of capacity types such as 1-sho bottles, pouches, and cans?
I think the capacity varies depending on the purpose and occasion of drinking alcohol.
I'm grateful that pouches and cans are easy to carry when I'm at leisure or traveling by train.
Issho bottles are easier to use when having a party at home, and I would like the culture of using them to remain.

The rice is ``Hyakumangoku no Shiro'' and the yeast is Kanazawa yeast.
The result is a dry Junmai Ginjo with a harmonious aroma and delicious rice flavor.
Wajima City is famous for having the largest catch of blowfish in Japan, and it is a delicious drink when paired with overnight dried blowfish.

Of course, we are worried about the funding required for rebuilding, but we have received a lot of support from everyone since the earthquake and have been able to continue making sake in the form of joint brewing, so I think the best way to rebuild is to do our best to respond to their wishes.
What is needed now for the reconstruction of Noto?
The most important thing is human resources.
Originally, the Noto area had been depopulated, and many people had no choice but to leave Noto due to the earthquake.
