Hoki Town is located in the western part of Tottori Prefecture.
Did you know that two young people who inherited a Doburoku brewery in this area are working hard to develop the town?

The Doburoku of ``Kamidai'' was the first in Tottori Prefecture to be approved as a special Doburoku district and has won numerous awards.
What kind of town development are we aiming for by taking over that Doburoku?
This time, we talked about the appeal of Doburoku, its future vision, and regional revitalization from the unique perspectives of the next generation.

About Kamidai

A town rich in nature, with Mt. Kamakura to the west and Mt. Daisen, the highest peak in the Chugoku region, to the north. Hoki Town, Tottori Prefecture.
Doburoku Brewery "Kamidai" is located in the Kamishiro district of Hoki Town.

There used to be a delicious and famous sake brewery in the Kamishiro area called Yoroizumi, but in the 1960s it merged with a sake brewery in Yonago City.

In 2005, the merged sake breweries in Yonago City formed a group of volunteers to make sake using Genryu rice from the Kamidai area, and the cloudy sake "Genryu Arare Sake Kamishiro" was born.
In 2008, we collaborated with the Kaike Onsen Association Youth Division to create ``Snow Falling in the Sea: Old Age''.

However, in 2009, it was decided that the sake brewery in Yonago City would go out of business.

“Is it no longer possible to make the alcoholic beverages of ancient times?”

The Kamishiro area has a long history as a rural community where people would bring together doburoku, which they had made together in sake bottles, to enjoy the taste and interact with the community.

Against this background,"Doburoku"and"Soba"In May of the same year, volunteers gathered to revitalize the local area once again, and in May of the same year, they built a new building at the site of the abandoned mine of the Fukuoka branch of Nibu Elementary School.``Town Development Company Uedai''will be established.
And in JulyApproved as the first Doburoku Special Zone in Tottori PrefectureIn January 2010, we obtained a brewing license.
From there, the ``old age'' style of Doburoku-zukuri began.

Furthermore, as part of the Agei Project, a farm cafeteria was opened on the site of the former Fukuoka branch of Nibu Elementary School.
The Fukuoka Branch of Nibu Elementary School was a place of spiritual support for the local community and was a school that had deep feelings for them, so we have kept as much of the school building as possible, aiming to revitalize the local area while also preserving the charm of Hoki Town.

Since its founding in 2009, "Kamidai" has revitalized the area in various ways, but in 2021, it was decided to close down due to the aging of the brewers, aging equipment, and the effects of the coronavirus pandemic.

The person who came forward as his successor is currently the fourth generation representative director."Misato Endo"Served as the second brewer with Mr."Yuya Ukegawa"Mr.

Representative Director “Misato Endo”

Born in 1997.Born in Yonago City, Tottori Prefecture.
While studying at a university in Osaka, he is so passionate about his hometown that he opened a tapioca specialty shop in Tottori during summer vacation.
After graduating, he got a job at a management consulting company in Osaka, but quit after 5 months due to a gap in policy between himself and the company.
I had a strong desire to contribute to Tottori, so I made a U-turn.
While looking for what he could do locally, he heard the news that ``Kamidai'' was going out of business.

Mr. Endo's father was originally involved in the establishment of ``Udai'', and he himself had participated in rice planting when he was a child, so ``Udai'' was a community that he felt very close to.

“It would be a shame if locally made products disappeared.”

He decided to take over the business in order to once again revitalize the area with his own hands.
He joined Uedai in January 2022 (Reiwa 4) and was appointed as the fourth representative director in August of the same year at the young age of 25.

Chief brewer “Yuya Ukegawa”

Ukegawa, affectionately known as "Uke-san," was born in 1995. Born in Kanonji City, Kagawa Prefecture.
Since my family is a farmer, I studied agriculture at a local university in Kagawa.
After graduating, he worked as a salesperson for a major consumer goods manufacturer, but while selling the company's products as a salesman, he felt a strong desire to sell something he had made from scratch.
Just when I had a clear idea of what I wanted to do, I met Mr. Endo and was invited to work with him at Kamishiro.

Since I had studied fermentation at university, I was also interested in sake brewing, and without hesitation I decided to become a brewer because it would allow me to realize my own dreams.

Mr. Ukegawa studied abroad in Indonesia for a year when he was a student, and is a multi-talented person who uses his language and communication skills to support the lives of students studying abroad at Tottori University.

Difficulties in business succession

Although these two people are full of talent, it seems that they had difficulty communicating with the previous brewers when taking over the business.

Even if the previous generation had a strong desire to take over the business, it must have been uneasy to suddenly entrust it to a young person who did not know the history of the previous generation.
This is even more difficult in the world of craftsmen.

However, by showing their thoughts and feelings towards town development and sake brewing through their actions rather than words, the two gradually come to understand how serious they are.
Mr. Ukegawa's industriousness and honesty allowed him to take over most of the sake brewing within six months, while Mr. Endo was quickly offered the position of president and gained their trust due to his passion for the local community and communication skills.

In this way, the two young generations have cherished “I want to liven up the town.”Inheriting this will and incorporating a new mindset, they have successfully revived the ``old generation.''

Currently, Mr. Endo is playing a central role in actively disseminating information on SNS, and as a town development company, he actively participates in events such as rice planting, visits to elementary schools, and festivals.“Thoughts and atmosphere”We are delivering.

Mr. Endo seems to be truly glad that he took over the business as he has had more opportunities to receive words of gratitude from the people of the town, such as ``Thank you for protecting our ancestors.''

As mentioned above, Hoki-cho, Tottori Prefecture, where the "Kamidai" is located, was the first place in the prefecture to open on July 17, 2009."Doburoku Special Zone"was certified.

What is “Doburoku Special Zone”?This area is specially approved for the production and sale of Doburoku, a locally produced fermented liquor, and is intended to revitalize the local economy by utilizing local resources.

Normally, the production of alcoholic beverages is subject to strict regulations under the Liquor Tax Law, but within special zones some regulations are relaxed, making it possible for even small-scale sake breweries to produce doburoku.

To be certified as a special zonecertain conditionsThese include hygiene control and quality control at manufacturing facilities, doburoku manufacturing methods that take advantage of regional characteristics, unique recipes using local ingredients, and whether there is a place where the manufactured doburoku can be served.

I also created a vision map with the hope of creating something that would energize the people living around it.

``Moromi Bijin'' is a low-alcohol doburoku that was created by the predecessor of ``Kamidai'' to target women.
The alcohol content is set at 8%, making it even sweeter, making it easy to drink even for people who don't usually drink alcohol.
It has the texture of rice grains and gas, so you can casually enjoy Doburoku.
It embodies the wishes of our predecessors, who wanted people to become beautiful by drinking this doburoku.

Also, the best part about cloudy sake such as Doburoku is that you can enjoy the clear sake as well!
The participating international students tasted the taste by dividing it into clear and cloudy parts.

Recommended pairing is with salty snacks such as prosciutto or caprese, which will harmonize well with the sweetness of doburoku.♪

How can we make the old password “Doburan tonight?” popular?

“Are you in the dark tonight?”

This is the password for ``Kodai'' that is gradually becoming popular on SNS.

How can we make Doburoku popular with this password?
We had all the international students discuss and come up with ideas!

How to make Doburoku popular?
  • Try using modern names such as "fermented smoothie" or "sake smoothie."
  • The container can be turned into a pouch for casual drinking.
  • The alcohol content should be as high as 20% so that you can enjoy different ways to serve it.
  • We create products that combine local specialties.
  • We propose that you can easily make sake at home by taking advantage of the characteristics of doburoku, which is still in its moxibustion state, and filtering it through a coffee filter.
  • As with other beverages, we will promote the product name rather than the item.
  • Infuse the doburoku into the toast sake.

Old Q&A

We would like to introduce some of the questions asked to the two ``Kamidai'' during the online sake brewery study abroad program.

Has it been 50% milled rice of 100% Gohyakumangoku since the previous generation?
Yes, that's right.
It seems that they used to try 70% milled rice, but due to the difference in taste and the reputation of the local people, they decided to use 50% polished rice.
Are there any changes you have inherited from your predecessor?
The recipe hasn't changed much.
We are changing work flow lines with efficiency in mind.
How much stone does it cost per year?
It is made using seasonal brewing and produces about 50 koku per year.
Since it is a small warehouse with minimal equipment, we are thinking about investing in equipment in the future.
How many minutes do you stir AM series amazake?
Amazake, an existing product that forms the basis of the AM series, is stirred for several tens of seconds.
After that, pasteurize for 1 hour.
