Dejima Hosendo

Opening in March 2023.

Dejima Hosendo is located in Dejima-cho, Nagasaki City, which has prospered as a hub for cultural exchange between Japanese, Chinese, and Dutch since the Edo period. Dejima Hosendo is based on the philosophy of ``passing on the aromatic Japanese culture from the town of fans to the next generation.''

“Brewing = the joy of making”
"Food and drink = pleasure"
“Craft = spinning heart”

This is a new style ``Brewery Gallery'' that fuses various fields of food.

Hayato Hyuga / Brewer/Shop owner

Born in 1993 in Munakata City, Fukuoka Prefecture.
After gaining brewing experience at a sake brewery in Saga and an urban brewery in Tokyo, he opened his own business in Dejima, Nagasaki.

Reason for introducing Dejima Hosendo

Dejima Hosendo's Amazake was served at Kasugai Garage, the owner of which is Keishiro Kawahara, who previously participated in Mori Sake Brewery's online sake brewery study abroad program.

Amazake like drinking rice yogurt
It all started when I was impressed by its potential.

The sake brewed by Dejima Hosendo is Doburoku, an ancient Japanese alcoholic beverage that uses all the ingredients. We offer two brands of traditional sake: ``Hosen'', a standard series that proposes sophisticated doburoku that goes well with Nagasaki's Japanese-Chinese and Dutch cuisine, and ``Tasuki'', a seasonal series that uses local agricultural products and connects producers and consumers.

This time's sake

Dejima Hosendo Hosendo

Hosen Kumo Mame Farm Omachi (300ml)
*Storage method: Refrigerated storage (vertical storage)
Slowly do not shake when opening (you can mix it after opening)

Housen's brewing is done entirely by hand to the same standard as the Daiginjo standard.

This is a special limited edition sake made from Mame Farm's Omachi brewed with the succulent and sweet Hosen -Kumo- which is part of the standard Hosen series and is made from ground rice grains.
Made with 100% Omachi rice, Japan's oldest rice variety.
It has a high-quality sweetness with a three-dimensional feel that is typical of Omachi, and the strong acidity that is typical of Mame Farm rounds out the finish beautifully.

Type: Doburoku
Ingredients: rice, rice malt
Raw material rice: Omachi
Mame Farm (Kurashiki City, Okayama Prefecture)

We make local agricultural products representative of Nagasaki's rich four seasons into doburoku to enjoy more widely and for a long time.
October's sash is a doburoku made with Niitakanashi pears from Matsuo Kanko Rien in Minamishimabara City, Nagasaki Prefecture.
Please enjoy the crunchy texture and juicy, fresh taste like biting into a whole pear.

Producer: Matsuo Kanko Pear Garden (Minamishimabara City, Nagasaki Prefecture)

This product has a particularly strong foaming feel, so be careful when opening it.
