Mr. Shinji Kusaka

Shinji Hinoshita is a master brewer who was born in Hiroshima in 1965. After setting the record as the youngest brewer (28 years old) at Chiyonoharu Sake Brewery, he founded Kusaka Muso at Murashige Sake Brewery. From 2019, we moved our base to Amabuki Sake Brewery in Saga and continue the brand. He is a unique person who admires Bruce Lee, has played in SASUKE, and is also known as a big baseball fan.

This time, as an extra edition, we would like to introduce Shinji Kusaka, who is not a sake brewer but owns his own brand, ``Hinoshita Musou.''

Reason for introducing “Kusaka Musou”


We introduce Kusaka Musou not only because of its appeal as an alcoholic beverage, but also because we believe that there is deep value in the person of the brewer, Shinji Kusaka.

At the young age of 28, he became the youngest brewer at the time, launched the sake brand ``Kusaka Muso'' that bears his name, and is an extremely rare figure in the sake industry, as he continues to create a brand that goes beyond sake breweries. The fact that a toji personally owns a brand shows the determination and belief he puts into his sake, and it can be said to be a unique challenge.

Kusaka's unique value is that he is able to explain in his own words not only his sake-brewing techniques that produce a gorgeous and deep flavor, but also the charms and difficulties of the job of being a brewer. We believe that this event, where drinkers can connect directly with the makers and share a cup with them, will be an opportunity to experience a new way to enjoy and deeply understand sake.

This time, we will be offering two bottles (300ml each) of ``Kusaka Musou Sparkling'' and ``Kusaka Musou Yago Yeast'' brewed with the phantom No. 8 yeast.

Kusaka Musou

Kusaka Musou Junmai Sparkling (300ml)

``Kusaka Muso Junmai Sparkling'' is a sparkling Japanese sake created by master brewer Shinji Kusaka. Made using Ganohana from Saga Prefecture, it features fine bubbles created through natural fermentation. It has a gorgeous and refreshing aroma, a richness that lets you feel the flavor of rice, and a silky texture. (Amabuki Sake Brewery)

It is dry and has a sharp aftertaste, making it perfect as a toast or as a drink on special occasions.

Kusaka Musou Yago Yeast (300ml)

``Kusaka Musou Hachigo Yeast'' is a product with outstanding acidity that is unique to Kyokai No. 8 yeast. Immediately after opening the bottle, it is crisp and sharp, but over time it becomes mellow and blends with the sweetness of the rice. This is a sake where you can clearly feel the uniqueness of the yeast when compared with Shichigo yeast.

Kyokai No. 8 yeast (Kumamoto yeast) was once discontinued and was called the ``phantom yeast,'' but its unique acidity and quality have been reevaluated, and it is now being revived and used in some breweries.

Regarding alcohol sales

We do not sell alcoholic beverages to persons under 20 years of age. I didn't start drinking until I was 20. Drinking and driving is prohibited by law. Drinking alcohol during pregnancy or breastfeeding may affect the development of the fetus and infant. Alcohol should be delicious and in moderation. Recycle after drinking.
