“How does the taste change with the same sake rice?”
In this online sake brewery study abroad program, we will introduce Cultiva, a doburoku brewery that was born in Itoshima City, Fukuoka Prefecture.
Cultiva's theme is "Sake Rice Terroir."
We strive to make sake that takes advantage of the unique characteristics of the land and varieties and brings out the charm of the rice itself to the fullest.
This time, we will compare two types of sake using the same sake rice, Yamake Nishiki, but with only the koji ratio changed.
While drinking, you will be able to experience how the flavor changes based on just one element, ``koji ratio'', rather than differences in manufacturing methods.
This is an online event where you can discover new ways to enjoy alcohol, not only for sake lovers but also for those who are new to doburoku and craft salmon.

Cultiva is a doburoku brewery born in Itoshima City, Fukuoka Prefecture.
Based on the concept of "sake rice terroir," we focus on the unique characteristics of sake rice varieties and regions of production.
Even if the manufacturing method is the same, the aroma, flavor, and aftertaste will vary greatly depending on the sake rice used.
At Cultiva, we express this difference in the style of doburoku so that everyone can enjoy it.
This is a brewery that is currently attracting attention, as it is not bound by stereotypes and is taking on the challenge of creating new types of sake that convey the charm of rice itself.

Centered on the concept of "sake rice terroir," we work on making doburoku that expresses the individuality of the sake rice variety and production area.
In this online sake brewery study abroad program, in addition to the background behind the establishment of Cultiva and his thoughts on sake brewing, we will also give an easy-to-understand explanation of the differences in taste due to sake rice and koji ratio.
Reason for introducing this sake brewery
We had been following Cultiva's activities on social media even before it opened as a brewery, and we were really looking forward to the news that a new Doburoku brewery was opening in Fukuoka.
After the brewery was completed, I had the opportunity to visit the site and hear directly about their thoughts on sake brewing, equipment, and the worldview they are aiming for.
I strongly sympathized with the unique concept of conveying the uniqueness of sake rice and the challenge of creating a new sake culture, and I wanted everyone to learn about it through online sake brewery study abroad, so I asked them to appear on this occasion.

Sankeinishiki NAGANO 2025BY -Koji Ratio 40- (300ml)
Doburoku with a 40% koji ratio, made using Yamakei Nishiki, a sake rice produced in Nagano Prefecture. This is a bottle that embodies the concept of "sake rice terroir" proposed by Cultiva, and you can enjoy the taste that allows you to feel the uniqueness of sake rice.

*This is a newly released product at the end of June 2026.
This Doburoku uses the same "Yamae Nishiki" from Nagano Prefecture, but only the koji ratio has been changed to 20%.

In this online sake brewery study abroad program, you will taste and compare two bottles made with the same sake rice and the same brewing design, but with only the koji ratio changed.
Even if the sake rice is the same, what kind of difference is made by changing the koji ratio? You can experience the difference by actually drinking and comparing.

We do not sell alcoholic beverages to persons under 20 years of age. I didn't start drinking until I was 20. Drinking and driving is prohibited by law.
