All rice used is from Hirado.
The glutinous rice is from Hirado, and the koji rice is Yamada Nishiki, grown by contracted farmers and in our own fields.

``When I first made Kimoto, I hadn't even sold it yet, but I tried storing it in oak barrels.The results turned out great, and I thought, ``This is great!'' ``This is the first time we've sold it since the opening of Kyushu Sake Brewery, and we were surprised that the response was better than we expected.''
