Seki no Ichi Sake Brewery was originally founded as a sake brewery, but in recent years has supported the beer industry in Iwate Prefecture as a local beer brewery.
As the craft beer business has become synonymous with breweries, in 2018, the company celebrated its 100th anniversary, and the fourth generation brewer, President Wataru Sato,The revival of a Japanese sake brewery for the first time in about 40 yearsI accomplished this.
It is a rare case for a company to change its business from being a beer brewery, and we were able to draw attention to such a charming sake brewery at Hands-on SAKE, which made it possible for President Sato to appear on stage.

About Seki no Ichi Sake Brewery

Founded in 1918 (Taisho 7).
The brewery is located along the Iwai River, which flows through the city of Ichinoseki City, Iwate Prefecture.
The roughly 3,000 square meter premises, which still retains old breweries that have been passed down from generation to generation, is lined with local cuisine restaurants, a beer factory, a museum, and more, and is a sake brewery that continues to attract visitors with its wide-ranging business development that utilizes its warehouses.

Now, on the occasion of the 100th anniversary of our founding, we have decided to fulfill our long-cherished wish of restarting sake production for the first time in about 40 years.
The idea of reviving a Japanese sake brewery has been around since the time of the third-generation brewer, but due to debt repayments and the effects of the earthquake, it could not be realized until the outbreak of the new coronavirus in 2020.
The sales of the brewery decreased, and it seemed that the revival of the sake brewery would be postponed once again.With the approval of a business restructuring subsidy and the support of crowdfunding, we were able to successfully fulfill our dream of rebuilding our sake brewery in 2023 (Reiwa 5).

Sekiichi Sake Brewery was once called a ``haunted house'' during its downturn, but the facility that was opened to the public has become a tourist attraction in Ichinoseki City, and the sake brewing that has inherited its history continues to please people, and today it has grown into an indispensable sake brewery in Iwate Prefecture.
National Registered Cultural Property “Seki no Ichi Sake Brewery”

If you look around the exterior of Sekiichi Sake Brewery, you will notice that it looks like a Western-style building.
This storehouse was designed by Mr. Tomosuke Obara, a native of Ichinoseki City.
Yusuke Ohara is a disciple of Kingo Tatsuno, who designed Tokyo Station, and a cousin of Tokuzo Sato, the company's first president.

The current president of Sekiichi Sake Brewery is Wataru Sato.
After graduating from Nihon University's College of Agriculture and Veterinary Medicine, Applied Biological Sciences Division, he started working at a consulting company.
He provided management support, but at the end of 1999, his father, the third-generation brewer, called him back to join the brewery due to the brewery's financial crisis.
Immediately after returning to the brewery, he is forced to choose between continuing the craft beer business, which was in the red, or shutting down.
President Sato then decided to make a decision.aloneWe have decided to continue our craft beer business.
President Sato, who loved making things, became increasingly absorbed in beer brewing and continued to develop products and grow the business.

Application of beer brewing! A closer look at the secondary fermentation of sake in tanks!

This is the tank used for sake brewing at Sekiichi Sake Brewery.
The interior has a double structure, and the pressure can be controlled and the temperature can be adjusted using a chiller, and it can withstand up to 1.5 atmospheres.
ThereforeOnce fermentation is complete, yeast can be added to the tank for secondary fermentation, and the wine can be left in the tank and then bottled.

It looks almost the same as a beer tank, but there are some parts at key points that are specifically designed for sake.
First of all, regarding the material for this piping, for beer we use a 1.5s standard diameter, but for sake, we use a 3.0s standard diameter, which is double the diameter because there is a possibility that the moromi may get clogged at the entrance.

There is also a difference between beer brewing and sake brewing at the bottom of the tank.
In the case of beer, it has a conical shape, but Seki no Ichi Sake Brewery's sake tank is unique in that it is distorted like a bowl.
The purpose of this is to allow the moromi to circulate more easily and to allow the chiller liquid to reach the bottom of the tank to cool or warm the temperature inside the tank.

I would like to introduce some of the questions that were asked to President Sato during this study abroad trip.
- The cap used by Seki no Ichi Sake Brewery looks sturdy, but is it original?
- The stopper used is a commercially available one.
I wanted the stopper to be similar to a 1-sho bottle, assuming that it would be consumed in several doses, and I chose one that would close tightly to prevent oxidation. - Are there any plans for Yokiichi Seki's alcohol to be sold in Hokuriku and other areas?
- In fact, we don't sell anywhere else yet, only through our own direct sales store and mail order.
Because we come from a beer field, we don't have any relationships with liquor stores that stock local sake, and we used to work together on brewing, so our ties are even weaker.
We will do our best to expand our sales channels from now on. - Please tell me the yeast used in each of the alcoholic beverages you prepared this time.
- We use ``Yuko no Omoi'' for Junmai sake, ``Giovanni's investigation'' for Junmai Daiginjo, ``Yuko Omomo'' for the primary fermentation of sparkling, and ``No. 7 yeast'' for the secondary fermentation.
- Is ``sleeping'' the same as disgorgement in champagne?
- For champagne, the lees are removed in the bottle, but the method is different from the lees removal done in our tanks, but the principle of removing the lees is the same.
- Can Seki no Ichi Sake Brewery make canned alcohol?
- Actually, I've already purchased a canning machine with the intention of making it in cans.
However, sake brewing machines are expensive, so when I bought a beer canning machine, it was designed for 350ml cans, so I think I'll have to modify it to fit 150ml cans.

Summary
What impressed me most when I listened to President Sato's talk this time was his sake brewing, which utilizes his knowledge of beer brewing. It can only be said that he had a background in beer brewing and was able to focus on secondary fermentation in tanks, which goes beyond the secondary fermentation in bottles that was considered common knowledge for sparkling sake.
In addition, I could see the thoughts from a beer brewing perspective in the details, and I felt that it was important for both brewers and drinkers to understand the world of alcohol from different fields.
On the other hand, I feel that the disparities between beer brewing and sake brewing, such as differences in equipment prices and distribution, have been highlighted.

- This was my first time participating, and in the initial introduction, I was told that ``this time is special,'' but I was surprised by the amount of alcohol that was sent to me in advance.
I was able to taste multiple beers and sake, and it was very fulfilling. - I was surprised that it is OK to store secondary fermentation type sparkling at room temperature.
The idea of secondary fermentation in tanks was an eye-opening production method that was born out of a beer brewer.
After listening to President Sato's talk, I feel like I have found the right answer, and I wish everyone would do this. At the same time, I felt that the sake industry operates in a small space and could develop further through interaction with other industries. - It was such a luxurious time that we had 4 types of alcohol and could talk directly with President Sato!

Since Tokatsu Sake Brewery won first place in the 2nd Monthly Oshikura Ranking (Japanese Sake Recommended for Mother's Day) held in May of this year, we once again received attention and will be making a comeback in the form of a revival.♪
The current sixth generation head of the brewery is the one who successfully revived Tokatsu Sake Brewery, which was forced to close in 1989.Mr. Yasushi Nonaka.
