Speaking of Saga Prefecture, it has recently been recognized as a Geographical Indication GI for sake, and is a prefecture that has become a hot topic for its sake breweries.
Among them, Amabuki Sake Brewery, which we will introduce this time, is one of the oldest breweries with a history of 333 years and has been in operation for 11 generations. What's more, this is a sake brewery that makes sake using yeast extracted from flowers, which is rare in the world.
This time,Mr. Sotaro Kinoshita, the 11th president of the company, introduced a pairing menu that goes well with Hana Yeast's alcoholic beverages, and we would like to share them with you.

Please enjoy this surprising pairing menu.

What is Sake Mariage Pairing?
In this article, we will explain about snacks that go well with sake, but before that! I would like to explain the term mariage pairing.
The word mariage pairing has a very fashionable image. Mariage comes from the French word, and pairing comes from the English word.
In the rough meaning of the word, mariage is ``marriage'' and pairing is ``combination.''
It's a little hard to understand from just this, so I'll explain what they mean and the differences.
What is mariage?
Mariage is also used in the food world in addition to the word "marriage." This is an expression often used especially when it comes to wine.
When two different things come together, something new is born, which is a way of expressing it that matches the word "marriage."
I feel like mariage has a multiplicative element of deliciousness, like A×B=C.
Marriage seems to be often used to express a highly anticipated result, such as combining alcohol and food to create a new flavor that was not present individually.
What is pairing?
In general, pairing has a slightly more flexible meaning than mariage. It's a place where you can enjoy a meal by combining alcohol and food.
It's like A+B=AB, where the deliciousness of each flavor is added together.
In the case of Japanese sake, the question is not whether to use mariage or pairing, but because there are many dishes that go well with each brand, mariage is used for multiplicative combinations, and pairing is used for items that go well with each other in a wide range of situations.

About Sotaro Kinoshita, the 11th president of Amabuki Sake Brewery LLC

Actually,Until its predecessor, Amabuki Sake Brewery consumed more than 95% of its products within Saga Prefecture, and apparently had not expanded nationwide for a long time. However, more than 20 years ago, the current president, Sotaro Kinoshita, began brewing sake using "hana yeast," which became a turning point for expanding nationwide and now worldwide.
President Sotaro Kinoshita, who brews sake that is recognized around the world, is active overseas, and this pairing also takes full advantage of his perspective as ``Japanese sake from an overseas perspective.''

Amabuki Junmai Ginjo Sunflower Yeast Pairing Menu

Here is a Junmai Ginjo made with summery sunflower flower yeast. It's a slightly dry type of sake that you'll want to drink in the summer because it's a summer flower.
The flower language of sunflowers is romantic: ``I only look at you.'' It might be a good idea to serve it at a special dinner with your partner.
The line of snacks that go well with Ginjo Sunflower Yeast are so-called ``slightly addictive snacks.''
For example, it is best paired with snacks that have a strong seafood flavor, such as pickled sardines or other green fish snacks or seafood snacks.
This sake also goes well with the flavor of cheese. It would also be great to pair it with blue cheese or cream cheese.
- Alcohol: Junmai Ginjo Sunflower Yeast
- Rice used: Sake Komachi
- Rice polishing ratio: 55%
- Alcohol content: 15%
- Recommended drinking method: 5-15℃, 20-25℃

We were introduced to various pairings, but this is the one that President Sotaro Kinoshita recommends!
It doesn't get your hands dirty, it's easy, and it's delicious! It is a snack that has 3 items.
The combination of the richness of the cheese and the flavor of the anchovies with the slightly dry sake made from sunflower yeast is the best.
It's a great snack that incorporates Japanese elements by wrapping it in seaweed to give it a Western feel!
Saga is famous for Ariake nori, so if you wrap it in Ariake nori, which is full of flavor, it will be even more delicious!
Amabuki Kimoto Junmai Daiginjo Pairing Menu

This Junmai Daiginjo is a so-called Kimoto-zukuri sake.
Kimoto-zukuri is a sake made using a method that allows lactic acid bacteria to naturally develop without adding artificial lactic acid bacteria to the yeast mother, and is a traditional method that takes twice as long as regular sake mother-making.
It's a Junmai Daiginjo sake that has a fruity taste, but it's also a very versatile sake that can be enjoyed either cold or hot!
- Alcohol: Amabuki Kimoto Junmai Daiginjo
- Rice used: Omachi
- Rice polishing ratio: 40%
- Alcohol content: 16%
- Recommended way to drink: All temperature ranges
Arrabbiata

The menu that goes well with Amabuki Kimoto Junmai Daiginjo is the Italian pasta ``Arrabbiata.''
Arrabbiata is an Italian word for tomato sauce flavored with chili peppers.
picture! ? Arrabbiata and sake! ! ? ?
I know it must have come as a surprise, but please give it a try!
It is also the birth of a new marriage.
The chili-like spiciness of Arrabbiata and the acidic taste unique to Kimoto-zukuri come together in a crackling, stimulating manner in your mouth.
Only President Kinoshita of Amabuki can discover such a new worldview!
Please give it a try!
Amabuki Junmai Ginjo Strawberry Yeast Pairing Menu

The cutely named strawberry yeast liquor is characterized by its fruity strawberry flavor.
Strawberry yeast is characterized by a gentle strawberry flower-like aroma and a sweetness that spreads across the tongue.
Compared to the sunflower yeast that I introduced earlier, it doesn't have the alcoholic and dry taste, and even though it is the same flower yeast, it feels like a contrast.
- Alcohol: Amabuki Junmai Ginjo Strawberry Yeast
- Rice used: Omachi
- Rice polishing ratio: 55%
- Alcohol content: 16 degrees or more but less than 17 degrees
- Recommended way to drink: All temperature ranges
frozen strawberries

A delicious snack made with Junmai Ginjo strawberry yeast...or rather, there is a way to drink it that is taught directly by president Sotaro Kinoshita.
Just add frozen strawberries!
If you put a few frozen strawberries in a sake glass and pour in some sake, you'll end up with a stylish cocktail rather than a pairing.
Drink sake while enjoying the strawberry flavor until the strawberries melt. Once it has melted, try eating the strawberry while soaking it in the sake. The sourness of strawberries and the sweetness of strawberry yeast combine to make you feel like you're drinking fruit wine or fruit cocktail even though it's sake.
In the summer, buying frozen strawberries and making them will keep your body cool, which seems like a good idea.
Please try it.
