The reason why we have been able to maintain our sweet taste despite the dry and tanrei boom in Niigata Prefecture in the 1990s is because of this. This is because we have local and existing customers who say, ``Katafune is delicious, isn't it?''
Our desire to take care of our customers who enjoy drinking Katafune has solidified our belief in sweetness.

Sake and pairing menu introduced this time

These are the three types of sake we will be introducing this time! !
1. Katafune Special Honjozo
2. Katafune “Hanajikan”
3. MANDOBA Kariage
We would like to introduce the characteristics and pairing menu of each.♪
Katafune Special Honjozo and Pairing Menu

Among the Takeda Sake Breweries, we have the highest production and shipping volume."This is Katafune"Speaking of which, this sake has become so synonymous that it is called special honjozo.
This special honjozo won the top award three times at the aforementioned “IWC (International Wine Challenge)”! !
This is truly a sweet sake that is recognized all over the world!
As for the taste, it has a sake degree of -3, so when you put it in your mouth, the soft sweetness swells, but it goes down the throat cleanly, so it's very well-balanced.
・Standard:Honjozo
・Rice used:Koji rice: Koshi Kagura/kake rice: Koshiibuki
・Rice polishing ratio:60%
・Alcohol content:16 degrees
・Japanese sake level:-3.0

Pairing menu

Special Honjozo Katafune Pairing
- chicken teriyaki
- meat and potatoes
- Miso-stewed mackerel
These 3 types of meals are suitable for sweet people! !
It has a strong flavor and is recommended to be paired with sweet and salty dishes!
chicken teriyaki

The skin is crispy! ! The ``chicken teriyaki'' has juicy chicken meat covered in sweet and spicy sauce.
This alone will go a long way in making many bowls of rice.♪
This sweet and salty taste goes perfectly with “Sweet Katafune”!
I want to bite into it boldly and pour it in with a quick, firm motion!
It's a simple dish that just requires seasoning, baking, and combining with seasonings, so it's great as a snack that you want to prepare quickly.♪
meat and potatoes

We also recommend pairing it with meat and potatoes, which is a typical home-cooked dish!
The soft potatoes soaked in the broth, and the flavor of the vegetables and meat harmonize with the sweetness of the katafune to create a delicious dish that will bring a smile to your face.
It might be the best snack when you want to have a relaxing drink.♪
Miso-stewed mackerel

Introducing ``Mackerel Boiled in Miso'', which is sure to go well with rice!
The sweet and rich miso sauce and the umami of the mackerel sublimate it to a high-quality sweetness without interfering with the sweetness of the katafune.♪
Not only is it sweet, but the acidity of Katafune leaves a refreshing aftertaste!
Also, although it's not a pairing, I thought it would be interesting to use ``Katafune'' as the alcohol used when cooking mackerel in miso, adding flavor and sweetness!
Katafune “Hanajikan” and pairing menu

The label features a clock design pointing to 9:45.“Friday, drinks at 9:45 p.m.”It is stated.
Drink this alcohol at the end of the week (Kakin),Time to relieve fatigue and relaxWith the hope that you will"Hanajikan"It was named.
The standard is Junmai Ginjo.
This is a low-alcohol unblended sake that does not contain any water.
The sake level is -50, which is an astonishing value, but this expresses the ``ultimate sweet sake'' inspired by ice wine and noble rot wine.
It is a very sweet sake, but in contrast, it has a high acidity of 4.3, soIt doesn't have a sticky sweetness when you put it in your mouth, but it has a smooth and sharp taste.
It is made with a balance of sweetness and sourness in mind.
・Standard:Junmai Ginjo
・Rice used:Koji rice: Etsudanrei/kake rice: Koshiibuki
・Rice polishing ratio:55%
・Alcohol content:12 degrees

Katafune Hanajikan Pairing
- cream cheese
- fruit chocolate
Suitable for all cheese types,Balance of sweetness and sournessseems to be the point of pairing with "Hanajikan".
It also goes well with astringent fruits, such as peaches and pears.♪
cream cheese

``Hanajikan'' is inspired by noble rot wine, and we recommend snacks that go well with Western liquor!
Among all cheeses, cream cheese is the perfect match, with its rich sourness and smooth texture blending with the sweetness of the cherry blossoms, allowing you to enjoy a blissful aftertaste.♪
The great thing about it is that it's easy to prepare!
fruit chocolate

Hanajikan is a perfect balance between the sweetness of fruit chocolate and the acidity of fruit.♪
At Takeda Sake Brewery, we recommend that you enjoy Hanajikan in a wine glass, so you can enjoy a luxurious time with stylish snacks like fruit chocolate!

Pairing menu

MANDOBA Kariage Pairing
- braised pork
- Mapo tofu
- Green pepper meat
MANDOBA, which is made from Kimoto and is an unprocessed sake, has a punchy flavor, so it is recommended to pair with meat dishes and strong-flavored Chinese dishes!
especiallyJapanese sake that goes well with Chinese foodIt's something that has never existed before, so I definitely want to try it with MANDOBA.♪
braised pork

Kakuni (braised braised pork belly), which has a rich sweet-salty sauce and a soft, chewy block of pork belly that will whet your appetite, is a classic snack that you always order when you find it at an izakaya.
For kakuni, which can be said to be the royal road to meat dishes, we recommend sake that packs a powerful punch and is made using kimoto brewing!
Fill your mouth with kakuni and pour it over MANDOBA to enjoy the best pairing time.♪
Mapo tofu

Is it possible to pair delicate Japanese sake with oily and heavily seasoned Chinese food?
Did you think so? ?
it's okay! ! MANDOBA is not such a soft drink!
It has a texture that rivals Chinese cuisine at all, and an elegant aftertaste that doesn't interfere with the taste of the food, so it's recommended as a pairing!
Please try it with the spicy mapo tofu aftertaste.♪
Green pepper meat

This is also a classic Chinese dish, “Green Pepper Meat Thread”! !
The real pleasure of seisho meat roe is to stuff your mouth with the rich and flavorful pork and crispy vegetables.♪
After enjoying such a thrill, if you take a quick bite of MANDOBA, you will definitely be happy and satisfied!
It is easy to make using a retort pouch, so it is recommended as a snack that is different from the usual.♪
