About Seki no Ichi Sake Brewery

Founded in 1918 (Taisho 7).
The brewery is located along the Iwai River, which flows through the city of Ichinoseki City, Iwate Prefecture.
The roughly 3,000 square meter premises, which still retains old breweries that have been passed down from generation to generation, is lined with local cuisine restaurants, a beer factory, a museum, and more, and is a sake brewery that continues to attract visitors with its wide-ranging business development that utilizes its warehouses.
At the time of establishment“Yokoya Sake Brewery”It was operated under the trade name.
Originally, there was a brewery called Kumabun Sake Brewery in this area that had been in operation since the Edo period, but it went bankrupt in the Taisho era, so Yokoya Sake Brewery's second son and first president, Tokuzo Sato, took over and established Yokoya Sake Brewery.
“Yokoya”The name is said to come from the fact that buildings were built sideways facing the street.

Yokoya Sake BreweryIt was a liquor store dedicated to the Imperial Family and Yasukuni Shrine, and in 1920 (Taisho 9), it was opened to the Imperial Family.Kaninnomiya (center of photo) visits the storehouse.
At that time,
“Make the best sake that makes people happy.”
I received the golden words,[One of the joys of the world]A brand was born.
In 1957, the company name was changed to Sekiichi Sake Brewery Co., Ltd.
After that,War, two floods, the Great East Japan EarthquakeAlthough Sekiichi Sake Brewery has faced numerous hardships and was forced into financial crisis many times, it has been able to overcome these difficulties thanks to the support of those around it and the never-give-up spirit of its brewers.
After a period of suspension of sake brewing and joint brewing, the local beer business started in 1995 (Heisei 7) and became a new synonym for Seki no Ichi Sake Brewery.
Our many craft beers that make use of local ingredients continue to be loved by everyone, winning awards at many competitions, and we are now the oldest beer company in Iwate Prefecture.

Now, on the occasion of our 100th anniversary, we will be able to resume our long-cherished desire to make sake again for the first time in about 40 years.
The idea of reviving a Japanese sake brewery has been around since the time of the third-generation brewer, but due to debt repayments and the effects of the earthquake, it could not be realized until the outbreak of the new coronavirus in 2020.
The sales of the brewery decreased, and it seemed that the revival of the sake brewery would be postponed once again. With the approval of a business restructuring subsidy and the support of crowdfunding, we were able to successfully fulfill our dream of rebuilding our sake brewery in 2023 (Reiwa 5).
The sake that was reborn in this way"The best in the world"was born and is trying to liven up Ichinoseki City not only with beer but also with sake.
Sekiichi Sake Brewery was once called a ``haunted house'' during its downturn, but the facility that was opened to the public has become a tourist attraction in Ichinoseki City, and the sake brewing that has inherited its history continues to please people, and today it has grown into an indispensable sake brewery in Iwate Prefecture.

Can be matched with various mealsI want to make alcoholThis special pure rice sake is made by polishing the edible rice "Hitomebore" from Ichinoseki to 60%.
The yeast used is ``Yuko no Omoi,'' developed in Iwate Prefecture, resulting in a soft and warm flavor.
When you put it in your mouth, the aroma and flavor of love at first sight spreads softly, and the smooth aftertaste leaves a clear impression.
Although the taste has already been perfected in the first year since sake brewing resumed, it is still in the trial and error stage, so President Sato is devoted to daily research until he achieves the quality of sake he envisions.

However, this unfinished special pure rice sake was held in June 2024.[MILANO SAKE CHALLENGE]In the tasting department ofWe received the highest award, the Platinum Award! !

(New Sake) Special Pure Rice Sake Sekiichi Pairing
- Grilled squid
- From sea squirt salt (bakurai)
(New Sake) Special Junmai Sake Sekiichi is a delicious and refreshing sake, so it goes perfectly with strong-flavored dishes and snacks.♪
Grilled squid

Squid fishing is also popular in Iwate Prefecture, and grilled squid stir-fried with fresh squid guts is the perfect accompaniment to sake.♪
The rich umami and slightly bitter flavor of the roasted pork fills your mouth, and when you pour the umakuchi junmai sake into it, it creates an exquisite harmony that makes you want to soak in the aftertaste.
It's a snack that can be cooked in a variety of ways, such as grilled with butter or added with garlic or ginger, so please try it! !
From sea squirt salt (bakurai)

Kesennuma City, Iwate Prefecture, is known as the birthplace of sea squirt farming, and this food is very familiar to people from Iwate Prefecture.
Sea squirts are often thought of as shellfish, but they are actually a type of chordate that is similar to animals.
It is called a sea squirt because its shape resembles a fire pit on a lampshade, and it is also called the ``pineapple of the sea'' because of its uneven shape.
Sea squirts are generally eaten as sashimi or vinegared dishes, but President Sato himself recommends salted sea squirts as his favorite food! !
This delicacy made from sea squirt and konowata (sea cucumber intestines) has a delicious flavor and the scent of the sea in your mouth, making it an excellent snack to accompany sake.♪
By the way, the name ``Bakurai'' comes from the fact that the shape of a sea squirt resembles a ``depth charge'', a bomb used to attack diving cameras.
“Sparkling Junmai Sake Sekiichi” and pairing menu

Sparkling sake made with Iwate Prefecture's edible rice "Iwatekko".
It's a little sweet with a sake content of -3.0, but it has some acidity, so it has a refreshing taste.
The soft effervescent feel wraps around your tongue, making it a sparkling drink that is extremely easy to drink.
In addition, the alcohol content is around 13%, so it can be enjoyed by a wide range of people, including those who don't like alcohol and women.♪
Sparkling sake is generally the same as champagne."Secondary fermentation in the bottle"It is brewed using this method.
However, Sekiichi Sake Brewery's sparkling beer takes advantage of its knowledge of beer brewing."Secondary fermentation in tank"We are hiring!
Thanks to Konokiichi Sake Brewery's original method, sparkling sake, which previously had to be stored refrigerated, can now be stored at room temperature, and the effervescence stays longer after opening.

Pairing menu with “Junmai Daiginjo Sake Sekiichi (Yui no Kaori)”

A Junmai Daiginjo made with Yuinoka, a sake rice from Iwate Prefecture that is comparable to the king of sake rice, Yamada Nishiki.
The origin of southern style sake brewing
“How to bring out clear flavor”
Yui no Kaori, developed for Daiginjo, embodies this.
In addition, Iwate Prefecture's yeast ``Giovanni no Taka'' and Iwate Prefecture's koji ``Roots 36'' are combined.
When reviving sake brewing locally,“I want to make local sake using ingredients from Iwate.”This Junmai Daiginjo was created with President Sato's thoughts in mind.
It has a gorgeous aroma typical of Daiginjo, and a refreshing taste that is not too sweet, giving you a clear and elegant flavor.

Iwate Prefecture also has an abundance of white fish such as sea bream, gurnard, and greenling.
With the rich aroma and refreshing taste of Junmai Daiginjo,Fresh sashimi that is light and firm is a perfect match!
You want to chew on the sashimi with the ginjo aroma filling your nose and soak in the aftertaste.
White meat and vegetable tempura

Introducing another tempura that is perfect for Junmai Daiginjo!
Of course you can have white fish tempura, but if you eat vegetable tempura such as leaves or lotus root with salt, it will really bring out the flavor of the sake!
especiallyShiitake cultivation is so popular in Ichinoseki City that it is called the Kingdom of Shiitake, and the mushrooms are so delicious that President Sato approves of them, so they are the best when made into tempura.♪
